Spiced Apple Cake with Maple Glaze

- CAKE:
- 3 cups chopped peeled apples (3 medium)
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 2 cups packed brown sugar
- 1 cup vegetable oil
- 4 eggs
- 1 teaspoon vanilla

- GLAZE:
- 1 1/2 cups powdered sugar
- 3-4 tablespoons whipping cream
- 1/4 teaspoon maple flavor

Step 1
Heat oven to 350°F. Generously grease 12-cup fluted tube cake pan with shortening; lightly flour.
In medium bowl, toss apples with 2 tablespoons of the flour. In another medium bowl, mix baking powder, baking soda, salt, cinnamon, nutmeg, cloves and remaining flour. In large bowl, beat brown sugar, oil, eggs and vanilla with electric mixer on medium speed until mixed. On low speed, beat in flour mixture just until blended. Stir in apples. Spoon batter into pan.
Bake 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 1 hour.
In medium bowl, mix all glaze ingredients until smooth and thick. Drizzle glaze over cake.

So easy to prepare and so good. I've tried a lot of fresh apple cakes lately and this is my favorite so far. Most other recipes also use more oil - up to 2 cups - making them greasy and unnecessarily high in calories, while this one is the perfect cake to use all those wonderful fall apples. This is my go-to recipe now!
I think this is the best apple cake I have ever eaten. It takes a little effort and extra time but is more than worth it. I plan on giving this cake out at Christmas in my gift baskets in the little loaf pans. I cut the time back to about 35 minutes for the small loaf pans.
