  • 300 grams sugar
  • 500 grams butter, at room temperature
  • Salt and lemon to taste
  • 100 grams eggs
  • 120 ml. milk
  • 870 grams pastry flour
  • Pinch of baking powder

Step 1

Cream together the sugar and butter until mixture is fluffy. Add salt and lemon. Slowly add the eggs, scraping down the bowl. Sift the flour with the baking powder. Add the flour and milk alternately, liquid must be added in stages to prevent curdling of fat mixtures. Make sure to add the bulk of the flour to the fat mixture after all the liquid is properly incorporated. Adding liquids after the flour is added results in tough dough. Chill paste before needed.
