Ingredients

  • 2 Ryvita crackers, crushed
  • 1/4 cup skim milk
  • 3 lbs. extra lean ground beef
  • 1 large green pepper minced,
  • 1/2 cup chopped onion
  • 6 large cloves minced garlic
  • 1 tsp. dried thyme
  • 2 large eggs (1 yolk only), lightly beaten
  • 1 tsp. Worcestershire sauce
  • 1 tsp. paprika
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 2 tbsp. strained salsa

Step 1

* Preheat oven to 350F. Put the Ryvita crackers crumbs in a small bowl and cover with the milk. Set aside. Put the meat in a large bowl. Saute the onions and green pepper in skillet at medium heat. Cook gently for about 3-4 minutes or until soft, stirring often. Add the sauteed pepper and everything else but the salsa to the meat and mix it lightly with your hands. Shape the meat into a loaf or two, put into a baking pan and spread the salsa over the top. Bake the loaf for 1 hour and 15 minutes. Remove from the oven and let rest for 10 minutes before slicing.
