Ingredients

  • 1/2 c. granulated sugar
  • 2 Tbsp flour
  • 1 env. unflavored gelatin
  • 1/2 tsp salt
  • 1 3/4 cup milk
  • 2 Tbspns. lemon juice
  • 2 tsps. grated lemon
  • 3 egg whites
  • 1/4 Tsp. cream tartar

Step 1

Day Before Serving:

Prepare Graham cracker crust. In saucepa: combine 1/4 cup sugar, flour, gelatin and salt; gradually stir in milk; cook over medium heat, stirring constantly, until
mixture just comes to boil. Remove from heat, cover surface with waxed paper and refrigerate until mixture mounds when dropped from spoon. Beat in lemon juice and peel. Set aside.

In large bowl with electric mixer at high speed, beat egg whites until frothy; add cream of tartar. Gradually beat in l/4 c. sugar, beating until stiff peaks form and mixture is glossy.

Fold milk-gelatin mixture into whites until thoroughly combine.

Spoon into pie shell. Sprinkle crumbs around
edge of pie. Refrigerate;
