Ingredients

  • ½# sweet butter
  • 3 egg yolk
  • 2 ¾ cups sifted flour
  • 3 tablespoons sour cream
  • 3 tablespoons sugar

Step 1

1. Blend flour with butter and add sugar, egg yolks, and sour cream. Make into dough and divide into two parts (1 larger). Roll one part out and fit into large pyre dish, about 9x12” filling.
2. Peel 14 medium sized apples and slice thin.
3. Sprinkle ¾ cup sugar, ½ teaspoon nutmeg, 1 teaspoon cinnamon, and 2 tablespoon tapioca over slices.
4. Sprinkle slices with lemon juice and stir well to distribute ingredients. Evenly place filling bottom crust and make level. Dot with butter. Roll out other piece of dough and cover. Seal edges like for pie and crimp edges to form design, as desired. Prick here and there with a fork to let steam escape. Dab top with pastry brush dipped in milk and sprinkle with a few finely ground nuts.
5. Bake in moderate oven at 350°F for about 45 minutes.
6. Sprinkle with powdered sugar before serving

*Sometimes must use more apples because of size to make a rounder pita
