Ingredients
- 2 1/2 cups all-purpose flour 1/2 tsp salt
- 1 1/4 cups packed dark brown sugar
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 cup canola oil
- 3/4 tsp baking soda
- 2 TBS molasses
- 1/2 tsp baking powder
- 4 egg whites
- 1 Cup milk
- 1/2 cup hot water

Preheat oven to 350 degrees
Coat 8" square baking pan with cooking spray. Combine first 6 ingredients. In separate bowl, at medium speed, beat sugar, oil and molasses until well blended. At medium-low speed, beat in whites until just combined. Beat in flour mixture alternately with milk until just combined. Pour into pan. Bake 45 minutes or until toothpick inserted into center comes out clean. Cool on rack.
