  • 1/4 lb high quality parmigiano reggiano
  • 1/4 tsp freshly ground black pepper
  • optional: add a little cumin or caraway seeds
  • (these quantities will make about 15 crisps, if you want more use more cheese)

Preparation

Step 1

Grate cheese on the large holes of a box grater. Sprinkle with
black pepper.
Prepare a baking pan by lining with parchment paper and spraying lightly
with cooking spray. Preheat oven to 400 F. Place level tablespoons of
cheese on baking sheet and flatten slightly, with spoon or spatula. Do not crowd as
crisps will spread.
Bake on middle rack of oven for 6-8 mins or until just golden brown.
Allow to cool on pan, then carefully remove onto paper towels to drain.

Crisps can be prepared two days ahead and stored in an airtight container,
in single layers between wax paper at room temp.
Crisps can be shaped while stil warm into small bowls by placing gently over
an turned down shot glass
