Ingredients

  • 1 c cooked chicken breast (about 5 oz)
  • ½ c low fat yogurt
  • 2 tsp honey
  • 2 TB salsa
  • ½ c cherry tomatoes
  • 1 TB walnuts, chopped
  • 2 c mixed salad greens
  • 1 tsp olive oil

Preparation

Step 1

Cut chicken in pieces and set aside.

In a small bowl mix yogurt, honey and salsa. Add chicken and stir gently.

Cut cherry tomatoes in half and set aside. Put mixed greens in a medium bowl and sprinkle with olive oil. Toss gently to coat the leaves with the oil. Sprinkle with the balsamic vinegar and toss again.

Top the greens with the chicken and cherry tomatoes and add the walnuts.
