Ingredients
- tomato sauce
- 1 box lasagna noodles, 1/2 cooked, drained & rinsed
- 1 lb shredded mozzarella
- 1/2 cup parmesan
- 1 pkg firm tofu
- 2 cups ricotta
- 2 beaten eggs
- 1 pkg frozen chop spinach, defrosted & drained
- salt & pepper

Preparation
Step 1
1. Spread a layer of sauce in a 9 X 13 pan. Mix together ricotta, eggs, spinach and salt & pepper
2. Cover with a layer of noodles (1/3). 3. Put a blotch of filling here and there (1/2) and tofu.
4. Sauce (1/3)
5. 1/2 of the mozzarella
6. another 1/3 of noodles
7. remaining filling & tofu followed by
8. sauce (1/3)
9. remaining mozzarella
10. noodles
11. sauce
12. parmesan
13. Bake at 375 for 35 minutes covered. Uncover for 10 minutes. Let stand 10 minutes.
