Ingredients
- 2 large eggs
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon grated lemon peel (optional)
- 1/2 t salt (reduce or omit if using salted butter)
- 1 cup all purpose flour
- 1 t baking powder
- 10 tablespoons (1 1/4 sticks) unsalted butter, melted, cooled slightly, plus more for coating pan (or use baking spray)
- 1 T honey
- Powdered sugar

Step 1
Preheat oven to 325°F. Coat madeleine pan with butter or baking spray. Combine dry ingredients in a large bowl. Melt butter and honey in microwave or on the stove, let cool.
Using electric mixer, beat eggs and sugar on high until light and fluffy, 3-5 minutes. Beat in vanilla and lemon peel (if using). Add flour mixture, beat just until blended. Gradually add cooled melted butter/honey mixture in steady stream, beating just until blended. Let batter rest for approx 30 minutes.
Spoon small-cookie-scoop of batter into each indentation in pan. Bake until puffed and brown, about 8-9 minutes. Cool 5 minutes. Gently remove from pan. Repeat process, greasing pan again as necessary. (Can be made 1 day ahead, but best the same day.)
Dust cookies with powdered sugar, if desired.
