  • 1 Tbsp vegetable oil
  • 1 sm onion - chopped
  • 1 cup instant brown rice
  • 3 cloves garlic - chopped
  • 1 can diced stewed tomatos
  • 2 cups chicken broth
  • 1/2 tsp cumin
  • Salt and pepper to taste

Step 1

In a large saucepan, sauté onion and rice in oil till browned.
Add garlic, tomatoes, chicken broth, and seasoning; bring to a boil.
Cover and reduce heat to low. Simmer for 10 to 20 minutes or until liquid is absorbed.
