Ingredients

  • 1.5 ounces bittersweet chocolate
  • 2 tablespoons Dutch-processed unsweetened cocoa
  • 1/3 cup water
  • 3 tablespoons unsalted butter
  • 1/3 cup sugar
  • 2 tablespoons corn syrup
  • 1/2 teaspoon vanilla
  • pinch of salt

Step 1

In a heavy, small saucepan (ideally with a nonstick lining) melt the chocolate and cocoa with the water, stirring constantly. Add the butter, sugar, corn syrup and salt. Simmer, stirring until the sugar has completely melted. Stop stirring and cook at a moderate boil for 5 to 10 minutes or until the mixture thickens and reduces to just under 2/3 cup (grease a heatproof glass cup before measuring). Swirl the mixture in the pan occasionally, but do not stir.

Cool slightly and add the vanilla. Keep warm or reheat in a water bath or microwave, stirring gently.
