Grilled Southwestern Style Chicken

While in a meeting with the manager of Strategic Partnerships for American Airlines Training Group in Dallas, we were served dinner. I asked the chef if he would share the recipe for chicken. He was glad to do that and sent it to me after I left Dallas.

Ingredients
- For sauce:
- 1 - 5 ounce chicken breast
- 1/2 lb clarified butter
- 1/3 cup diced green onions
- 12/3 cup diced yellow onion
- 1/3 cup diced fresh tomatoes
- 1 Tbsp basil
- 1/4 cajun spice
- Salt and papper to taste
- 1/3 tsp garlic
- Egg and Milk for a wash
- Fresh Parmesan cheese
- Pasta: Fettucini is preferred.

Preparation
Step 1
Dredge chicken breast, then dip in egg wash (beaten whole eggs and milk) and brown on both sides. Finish cooking in oven. Slice in thin strips when ready to serve.
Sauce
Heat butter over medium heat. Add garlic, yellow onion, simmer until tender. Add salt and papper to taste. Add tomatoes and green onions to sauce just before serving.
Place hot cooked pasta on plate. Put small amount of sauce on pasta. Place chicken breast on top of pasta and cover with sauce. Top with fresh parmesan cheese.
