Ingredients

  • Cake:
  • 1 1/2 cups sugar
  • 2 large eggs
  • 2 cups white flour
  • 2 teaspoon baking soda
  • 2 teaspoon baking powder
  • Pinch of salt
  • 1 19 ounce can fruit cocktail including syrup
  • Icing:
  • 3/4 cups white sugar
  • 1/2 cup butter
  • 1/2 cup heavy cream or evaporated milk

Preparation

Step 1

Preheat oven to 350.

In a large bowl, beat eggs and sugar approximately 2 minutes or until light creamy yellow.

Add too mixture: flour, baking soda, baking powder, salt, fruit cocktail with juice.

Beat together until well blended.

Pour into well buttered 10 inch bundt cake pan and place on the middle rack of oven.

Bake for 50 - 60 minutes or when inserted toothpick comes out clean.

Set aside on rack until cooled. About one hour
Unmold onto a large cake plate.

*Icing*
Boil sugar, butter and cream over medium heat
Stir continuously until candy thermometer reads 234 degrees.

Remove from burner immediately and stir for 1/2 minute.

Spread icing on cooled cake.
