- 1 cup all-purpose flour and additional flour for dusting
- 1 Tbsp and 1 cup packed light brown sugar, divided
- 1 cup unsweetened applesauce
- 4 Tbsp melted unsalted butter
- 2 large eggs
- 1 tsp vanilla
- 1 tsp baking soda
- 1/2 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 apple, peeled, cored, and chopped
- 1/2 cup raisins

Preheat oven to 350℉.
Mist an 8.5-by-5-inch loaf pan with cooking spray and dust with flour, then sprinkle bottom with 1 Tbsp packed light brown sugar.
In a large bowl, whisk together 1 cup unsweetened applesauce, 1 cup packed light brown sugar, 4 Tbsp melted unsalted butter, 2 large eggs, and 1 tsp vanilla.
In a separate medium bowl, whisk together 1 cup all-purpose flour, 1 tsp baking soda, 1/2 tsp baking powder, 2 tsp cinnamon, 1 tsp nutmeg, and 1/2 tsp salt; stir into applesauce mixture until just combined. Fold in 1 peeled, cored, and chopped apple and 1/2 cup raisins.
Pour batter into prepared pan, and bake until a toothpick inserted in center comes out clean, about 1 hour 15 minutes. Cool 30 minutes on a wire rack, remove from pan.
