Ingredients

  • 6 cups assorted raw nuts (not roasted or salted) such as pecans, walnuts, pistachios, and whole almonds
  • 1/4 cup pure maple syrup (not pancake syrup)
  • 2 tbsp vegetable oil
  • 3/4 tsp regular or sea salt
  • 1-1/2 tsp ground ginger
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/8 tsp cayenne pepper, or more to taste
  • Cooking oil spray

Preparation

Step 1

Heat oven to 350 degree. Place nuts in large mixing bowl. Add syrup and oil, and toss. Sprinkle on salt, ginger, coriander, cumin and cayenne pepper. Toss until nuts are evenly coated.
Spray large baking sheet that has a rim with cooking spray. Pour nuts evenly onto pan. Bake, removing pan from oven to stir nuts every 5 minutes, until nuts are toasted and fragrant and have absorbed syrup, about 20 minutes.
