Ingredients

  • 5 Tbs. bacon drippings
  • (oil may be substituted)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 Cups long grain rice ( uncooked)
  • 2 cups canned tomatoes
  • (or rotel can be substituted) with juice
  • 2 Cups chicken broth
  • 2 Cup canned peas, drained (optional)
  • Salt to taste

Preparation

Step 1

In a large skillet, heat bacon drippings
over medium heat, Saute
onion, garlic, and rice in drippings, stirring
constantly until rice is golden brown,
Break up tomatoes into small piece.
Add tomatoes and their juice
and chicken stock to the rice. Stir only enough to
mix.Cover and simmer over low heat for
20-30 minutes or until rice is tender and
all liquid is absorbed. Donot uncover or stir
during cooking time. To serve, fold in peas
(if desired) and add salt as desired.
If serving time is delayed rice
will keep for 30 minutes if it remains
tightly covered.
