Ingredients

  • 1 lb. large raw shrimp, peeled and deveined
  • 1 tsp. thai red curry paste
  • 1 tbsp. olive oil
  • 4 cloves garlic, minced
  • 2 large tomatoes, peeled, seeded and chopped
  • 3/4 cup dry white wine
  • zest and juice of 1 lime
  • 1/4 tsp. each salt and freshly ground pepper
  • 2 tbsp. chopped fresh cilantro
  • 6 oz. whole wheat spaghetti or linguine

Step 1

In bowl, toss shrimp with curry paste until well coated. Cover and refrigerate 2-8 hours. In large non-stick pan, heat oil over med. heat. Cook garlic just until golden, 1-2 mins. Add tomatoes, wine, zest and juice. Bring to boil. Reduce heat and simmer until sauce thickens,a bout 8 mins. Add shrimp and cook, stirring until pink, 3-4 mins. Stir in cilantro. Cook pasta until al dente, about 8 mins. Drain and add pasta to shrimp. Toss to coat with sauce.
