Ingredients
- 1 pound sweet potatoes, peeled and cut into chunks
- 6 eggs, lightly beaten
- 3 cups confectioners' sugar
- 1 1/2 cups butter, softened
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp grated lemon peel
- 1/2 cup brandy
- 1/2 cup firmly packed brown sugar
- 1 cup whipping cream
- 2 tbsp granulated sugar

Preparation
Step 1
In a large saucepan, boil sweet potatoes in water until tender. Drain potatoes and mash until smooth.
Preheat oven to 375 F. In a large mixing bowl, combine mashed potatoes, eggs, confectioners' sugar, butter, cinnamon, nutmeg, lemon peel and brandy; blend well. Pour mixture into a greased 13-by-9-by-2-inch baking pan. Bake 40 to 45 minutes or until top is firm. Sprinkle brown sugar over top and bake 5 minutes more.
In a mixing bowl, beat cream with sugar until stiff peaks form. Serve whipped cream with pudding.
