Ingredients

  • 3 medium baking potatoes, scrubbed
  • Olive oil
  • 4 ounces Feta cheese, crumbled
  • 1 1/2 tsp oregano leaves
  • 1/2 tsp basil leaves
  • 1/4 tsp rosemary leaves
  • 1/2 tsp garlic salt

Preparation

Step 1

Preheat oven to 400 F. Prick potatoes and rub with oil. Bake potatoes 1 hour or until done.

Cool potatoes slightly. Preheat oven to 450 F. Cut potatoes in half lengthwise. Leaving about a 1/4-inch shell, scoop our pulp. (Reserve pulp for another use, if desired). Cut skins in half lengthwise again; then cut skins in half crosswise. Place skins on a baking sheet and brush generously with oil. Bake 5 minutes. Combine remaining ingredients. Remove skins from oven and top with cheese mixture. Drizzle with more oil. Broil 2 to 3 minutes or until cheese is bubbly.
