Ingredients
- 1 cup shortening
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups crushed potato chips
- 1/2 cup chopped walnuts (optional)

Step 1
Preheat oven to 350 F. In a large bowl, cream together the shortening, white sugar and brown sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. In another bowl combine the flour, baking soda and salt. Gradually stir into the creamed mixture and continue to mix until well incorporated. Finally, fold in the potato chips (and walnuts, if desired). Drop by rounded spoonfuls onto an ungreased cookie sheet. Bake for 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
Makes 5 dozen medium-sized cookies.
