Ingredients

  • 1.5 ibs of ground turkey or beef
  • 1/3 cup bread crumbs
  • 1/2 cup evaporated milk (regular milk can work as well)
  • 1 1/4 tsp salt
  • 1 16 oz can of pineapple chunks
  • 1 cup dices red pepper
  • 2 tbsp cornstarch
  • 1/4 cup brown sugar
  • 1/4 cup vinegar
  • 2 tbsp soy sauce

Step 1

Combine beef/trkey, bread crumbs, salt and milk. Shape into balls and bake at 375 for 25 minutes. Drain pineapple, reserve the juice. In large bowl combine pineapple, bell peppers and meat balls - set aside. In saucepan combine cornstarch, brown sugar, vinegar, pineapple juice and soy sauce. Cook over low heat stirring occasionally until thick and clear. (approx. 10 minutes) Add meatballs, pineapple and peppers. Heat through just until peppers are tender but crisp. Serve over rice.
