B.L.T. Salad with Avocado Ranch Dressing 1 Picture

Ingredients

  • * 1/2 pound sliced bacon, cooked until crisp
  • * 2 heads iceberg lettuce
  • * 4 ripe Heirloom tomatoes, cut into 1/2-inch slices
  • * 2 tablespoons snipped fresh chives
  • * 1 large avocado, peeled
  • * 1 cup mayonnaise
  • * 1/2 cup sour cream
  • * 1/3 cup chopped scallions
  • * 2 tablespoons lemon juice
  • * Salt and freshly ground black pepper

Step 1

1. In a food processor combine the avocado, mayonnaise, sour cream and lemon juice and mix together until smooth. Add the chopped scallions and season well with salt and pepper.
2. To compose the salad, cut the iceberg lettuce into 1 inch discs. (You should get 2 portions per head of lettuce.) Place the first slice of lettuce on a plate. Spoon 1 tablespoon of the avocado ranch dressing on top of the lettuce. Then arrange the tomato slices on top and season with salt and pepper.
3. Place 2 pieces of crisp bacon on top of tomatoes. Finally, top with another slice of iceberg lettuce. Drizzle more Avocado Ranch dressing on top of salad and sprinkle with chives.
