Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 3 tbs melted margarine
  • 2 tbs. sugar
  • 2/3 cp sugar
  • 1/3 cup cornstarch
  • 2 1/2 cups milk
  • 2 eggs, lightly beaten
  • 1 yolk, lightly beaten
  • 2 tsp. vanilla
  • 2 drops yellow food color
  • 2 1/2 cups sliced ripe bananas, divided
  • 1 cup whipped topping

Step 1

Preheat oven to 350 degrees. Combine the 1st 3 ingredients in amedium bowl, toss with a fork until moist. Press crumbs onto bottom and sides of a 9 inch pie plate. Bake at 325 for 10 minutes.

Combine 2/3 cup sugar and the cornstarch in a pan, slowly add milk, with a whisk. Bring mixture to a boil over medium heat, cook 1 minute stirring. Slowly add hot milk to the combined egg and yolk. Return milk to pan and cook over medium heat until thick, stirring. Remove from heat, stir in vanilla and food coloring.

Arrange 1 1/2 cups banana in the botoom of the pie crust, pour 1/2 of the custard over top. Top with remaining bananas and custard. Cover with plastic wrap and chill 4 hours. Spread with whipped topping.
