Ingredients
- 4 boneless, skinless chicken breasts,
- 2 tsp olive oil,
- 2 tbsp sliced green onion,
- 1-1/2 cups mushrooms sliced,
- 2 tbsp water,
- Pepper to taste,
- 1/4 cup dry Marsala (wine) or dry sherry.

Step 1
* Preheat skillet over medium heat and add 1 tsp olive oil. Add chicken breasts. Cook over medium heat for 4 to 5 minutes each side or until cooked and there’s no pink inside. Transfer to a platter; keep warm. In same skillet, add 1 tsp olive oil and sauté mushrooms, green onion, water, salt and pepper. Cook over medium heat until mushrooms are tender and most of the liquid has evaporated (about 3 minutes). Add Marsala or dry sherry to skillet. Heat through. Spoon vegetables and sauce over chicken.
