Ingredients
- 1 cup sun-dried tomatoes
- Boiling water
- 2 garlic cloves, minced
- 1 tbsp capers
- 2 tsp Italian seasoning
- 1 tsp salt
- 5 tbsp olive oil
- 2 tbsp red wine vinegar
- Melba toast, to serve
- Ricotta cheese, to serve

Preparation
Step 1
Place tomatoes in a small bowl and add boiling water to cover. Let sit 15 minutes; drain.
Place tomatoes in a food processor and puree. Add garlic, capers, Italian seasoning, salt, oil and vinegar. Process until well blended and mixture is still slightly coarse. Adjust seasonings, if desired. Store in a jar in the refrigerator until ready to serve. To serve, spread melba toast with ricotta cheese and top with sun-dried tomato spread.
