Ingredients
- 4 chicken breasts
- 2 celery stalks
- 8 oz of snow peas
- 1/2 cauliflower
- 4 oz bamboo shoots
- 1 green pepper
- 1 egg white
- 1 cup chicken stock
- 2 tbsp oyster sauce
- 2 cloves garlic
- 1 med chinese cabbage
- 1 med onion
- 8 oz fresh mushrooms, sliced
- 4 oz baby corn
- 4 oz water chestnuts
- 1 red pepper
- 4 tbsp cornstarch
- 4 tbsp oil
- 3 tsp each salt, pepper & sugar
- 2 tbsp dry sherry

Preparation
Step 1
Hold knife at 20* angle and slice the chicken into large, thin slices. Place in bowl and marinate with 1 tsp salt, pepper, beaten egg white and 1 tbsp cornstarch.
Mix well with 1/4 cup of chicken stock and let stand for 10 minutes. Cut pepper into 2 inch strips. Tear ends and sides off the snow peas.
