Chicken Pot Pie 0 Picture


  • 1 T olive oil
  • 1 T butter
  • 1 medium onion chopped
  • 1/4 c flour
  • 2 c chicken stock
  • 2 c cooked chicken chopped
  • 1 potato diced small
  • 1 bag (16 oz) frozen mixed veggies (green beans, corn, peas, carrots)
  • salt and pepper
  • ready made pie crust or corn bread (jiffy)


Servings 6


Step 1

Grease a 2 qt casserole or 9x13 glass pan, or make 2 pie containers. In a large sauce pan heat olive oil, butter, and onion about 4-5 minutes. Add flour until blended. Slowly stir in 2 cups of chicken broth whisking well. Cook mixture over medium heat until thick and bubbly about 4 min. Stir in the rest of the ingredients and cook for a few mins to soften. Pour into the pan and top with pie crust or the topping of your choice. Bake at 400 aobut 25-30 mins.
