  • 15-18 lb. turkey
  • salad oil
  • your favorite stuffing (see @46430 for my homemade stuffing)

Preparation

Step 1

Thaw turkey if frozen (takes 2-3 days in the refrigerator).

Remove the giblets and neck from the cavities. (Boil the giblets for 1/2 hour to use in giblet gravy.)

Rinse the turkey inside and out. Stuff with dressing. Use skewers to hold skin over neck cavity containing stuffing. Place a slice of bread over groin cavity containing stuffing, then using kitchen twine, tie the legs together.

Place turkey in large roasting pan with rack. Cover lightly with salad oil. Tent loosely with aluminum foil. Put in 325 degree oven.

Roast for 15-20 minutes per pound. Baste with oil until the pan contains drippings, then baste with the drippings several times during roasting. During the last 45 minutes, remove the foil tent and raise temperature to 425 to brown the skin.

Remove from oven when a meat thermometer registers 180 degrees. Let stand for 10-15 minutes. Remove stuffing and carve the turkey.
