Oatmeal Cake

Ingredients

• Cake:
• 1 1/4 cup water
• 1 cup oatmeal
• 1 stick butter
• 1 cup sugar
• 1 cup brown sugar
• 2 eggs
• 1 1/2 cup flour
• 1 tsp cinnamon
• 1/4 tsp salt
• 2 tsp nutmeg
• 1 tsp baking soda
• 1 tsp vanilla
• Frosting:
• 3 tbl butter
• 2/3 cup brown sugar
• 1 cup coconut
• 1/2 cup chopped nuts
• 1 egg
• 3/4 cup canned milk

Preparation

Step 1

Cake:

Preheat oven to 350.

Bring water to boil, mix oatmeal and let cool 20 minutes. Cream butter, sugar and brown sugar. Add 2 eggs, then flour, cinnamon, salt, nutmeg, baking soda and vanilla. Mix water/oatmeal to mixture. Bake for 55 minutes.

Frosting:

Beat butter and brown sugar, add coconut, nuts, 1 egg, and canned milk. Spread on cake and brown in broiler.
