Rum Squash

Ingredients

  • Oven 350 F
  • 4 cups mashed cooked squash, or frozen thawed
  • 2 Tbsp rum
  • 2 Tbsp maple syrup
  • 1/2 tsp salt
  • 1 Tbsp cream
  • 1/2 cup well drained crushed pineapple
  • 5 Tbsp butter
  • 1/2 cup brown sugar
  • 1/2 cup chopped walnuts

Preparation

Step 1

Mix squash, rum, syrup, salt, cream, pineapple and 3 Tbsp butter and pour into a greased 2 quart casserole.

Melt remaining butter over low heat and stir in brown sugar and walnuts.

Cook stirring until creamy and pour over squash.

Bake 20-30 minutes
