Ingredients

  • 1/2 cup Crisco
  • 1/2 cup butter
  • 1 1/2 cups brown sugar
  • 1 egg
  • 1 1/2 cups flour
  • 1 1/4 cups rolled oats
  • 1/2 tsp salt
  • 2 tsp. baking powder
  • 1 cup grated coconut
  • 1 tsp. vanilla

Preparation

Step 1

Cream shortening, butter and sugar together. Add vanilla. Add egg and beat until fluffy. Sift flour. Measure and add salt and baking powder. Sift again. Add dry ingredients and rolled oats to creamed mixture. Mix thoroughly. Add grated coconut and blend well into dough. Drop by teaspoonfuls onto greased baking sheet, placed 2-3 inches apart, or roll into small balls and press flat with a fork. Bake at 375 degrees for approximately 12 minutes. Makes 3 dozen cookies.
