Ingredients

  • 1 med. zucchini
  • 1 med. yellow squash
  • 1 med. red bell pepper
  • 1 med. yellow bell pepper
  • 1 lb. asparagus
  • 1 red onion
  • 3 tbl. extra virgin olive oil
  • 1 tsp. Tastefully Simple seasoned salt or 1 tsp. salt and 1/2 tsp. freshly ground black pepper

Step 1

Cut vegetables into large bite sized pieces. Place in large roasting pan. Toss with the olive oil and seasoned salt or salt and pepper. Spread in a single layer in the pan.

Roast at 450 degrees for 30 minutes stirring occasionally until the vegetables are lightly browned and tender.
