These are healthier-than-the-average cookies because of the addition of wheat germ, raisins and dried apple bits. Browning the oats in margarine gives the cookies a nice nutty flavor.

Step 1

In medium skillet over medium heat, melt margarine. Add oats; saute stirring constantly until golden, about 5 minutes. Remove from heat. Cool. NOTE: If using a non-dairy margarine, add oats when margarine is melted and brown the oats that way.

Sift flour with cinnamon, salt and soda; set aside.

In large bowl, combine sugar, egg and vanilla. Beat until light at medium speed. Stir in oats, flour mixture, wheat germ (if used), raisins and apple bits until well combined.

Drop by slightly rounded teaspoonfuls 3 inches apart onto cookie sheet covered with parchment paper. Bake at 375 for 9-10 minutes.
