Ingredients

  • 6 chicken pieces with skin and bone
  • 6 large sausage ( mild italian) no skin , in pieces
  • 3 med onions, cut in small pieces
  • 3 cloves garlic, crushed
  • 1 red pepper, cut into 1 inch pieces
  • 1 green pepper, cut into 1 inch pieces
  • 1/2 cup Italian rice (uncooked)
  • 4 plum tomatoes, cut up
  • 2 cups chicken stock
  • basil, oregano, bayleaf to taste
  • 1/2 tsp saffron
  • 6 oz shrimp, med size
  • 15 mussles

Preparation

Step 1

In skillet, cook chicken pieces on high heat to saute and brown both sides, set aside. In another pan , saute sausage pieces ,set aside.

In pan, cook onions, peppers, garlic and rice to pan.
Return chicken and sausage, add plum tomatoes, then broth, spices, saffron and stir. Bring to a boil and put in oven dish, add shimp and mussles half way through so as not to overcook.

Bake at 375* for 30 to 40 minutes.
