Ingredients
- 1/2 cup long-grain white rice
- 2 tsp olive oil
- 1 cup green pepper, diced
- Salt
- Freshly ground pepper

Preparation
Step 1
Bring 2 to 3 quarts water to boil in a large saucepan. Add rice and boil, uncovered, about 10 minutes. Test a grain; rice should be cooked through but not soft.
Drain rice into a colander in the sink. Return it to the pan. Mix in oil and green pepper. Add salt and pepper to taste.
