Chicken Corn Chowder

Ingredients
- 1/4 cup chopped onion
- 1/2 cup chopped celery
- 2 tbsp. butter
- 1 quart chicken stock
- 2 cups corn
- 1 cup diced potatoes
- 2 tsp. parsley
- 1 cup diced chicken
- 1 cup light cream
- 1/4 tsp. paprika
- 3 tbsp. flour
- salt and pepper

Preparation
Step 1
Sauté onion and celery in butter until soft but not browned. Stir in flour gradually and add to hot chicken stock. Add corn, potatoes and parsley. Cook slowly for 30 minutes or until potatoes are tender. Add chicken, cream, salt and pepper and paprika. Let simmer for 15 minutes more and serve hot.
