Ingredients

  • Cake:
  • 1 stick butter, softened
  • 3 eggs
  • 2/3 cup milk
  • 1 teaspoon vanilla
  • 3 lg. very ripe bananas
  • 1 1/2 cup pecans, finely chopped
  • 1 box yellow cake mix
  • Icing:
  • 1 lb. confectioners sugar
  • 1 stick butter, melted
  • 2 large very ripe bananas
  • 1 cup coarsely chopped pecans
  • 1 teaspoon vanilla
  • Milk, if needed (add 1 teaspoon at a time)

Step 1

Cake: Preheat oven to 350 degrees. Allow the stick of butter to soften. Grease and flour a 9 x 13-inch cake pan. Blend, in a large mixing bowl, the butter, eggs, milk, cake mix and vanilla, just until moistened. Mash the bananas and add to mixture. Then add pecans. Beat 4 minutes at medium mixer speed. Do not overbeat. Pour batter into greased and floured pan. Bake 45 to 55 minutes, or until middle springs back up when touched.

Icing: Mash the 2 bananas and add to powdered sugar, vanilla and softened butter. mix at low speed while adding milk, one teaspoon at a time, until desired consistency. (Do NOT add pecans yet.)

To Frost cake: While still hot, punch holes in cake with fork. Pour 1/2 of frostin on cake and spread. (Most of this frosting will soak into cake.) Allow cake to cool. Add the pecans to remaining frosting and spread on a cooled cake. This cake is better the second day and freezes well.
