  • 1 tsp. canola oil
  • 1 cup broccoli florets
  • 1/2 cup mushrooms
  • 1/2 cup chopped red and green pepper
  • 1 egg
  • 1 oz. low-fat cheddar cheese, shredded
  • pinch freshly ground pepper

Preparation

Step 1

In small non-stick pan, heat oil over med-high heat. Add broccoli, mushrooms and pepper and saute until tender, about 5 mins. Transfer to a plate. Using fork, stir together egg, cheese and pepper in a bowl. Pour into pan and cook 5 mins., lifting edges to allow uncooked egg to run underneath until almost set. Sprinkle veggies over half the omlette. Using spatula, fold over other half and cook 1 min.
