Ingredients
- 100g unsalted butter
- 1 onion, finely chopped
- 3 garlic cloves, finely chopped
- 3 c chicken stock
- 3 c milk
- 225g instant polenta
- 1 1/2T each
- fresh thyme
- flat parsley
- sage leaves
- 2 1/2 c grated parmesan

Preparation
Step 1
heat butter in a large saucepan over medium heat. Add onion and garlic and cook gently for 5 minutes, stirring, until soft, but not coloured. Add stock and milk, then bring to the boil. Pour in the polenta in a slow steady stream, whisking vigorously until the mixture begins to boil. Reduce the heat to low and cook, stirring, for 3-4 minutes until the mixture thickens and becomes smooth and creamy.
Remove the pan from the heat and stir in the herbs and cheese. Season with salt and pepper, then serve immediately.
