cups Original Bisquick® mix

Heat oven to 325ºF. Grease rectangular pan, 13x9x2 inches.

Cook ground beef and onion in 10-inch skillet, stirring frequently, until beef is brown; drain. Stir in dry seasoning mix, tomato sauce and corn. Spoon into pan; sprinkle with cheese. Stir Bisquick mix, milk and eggs until smooth. Pour over beef mixture.

Top it like a taco with shredded lettuce, chopped tomatoes and sour cream. To make it extra-special, add sliced ripe olives, guacamole and something spicy such as chopped jalapeño chilies or crushed red pepper.

To keep Bisquick mix fresh longer, refrigerate after opening it.

Loved this! My mom used to make this for us as kids. Tonight I made it for the first time for my son. He loved it! And he's picky!!! I added black beans. This will be a regular on our dinner menu's list.

Not a fan of the soft Bisquick pancake textured topping so made a variation with crushed corn tortilla chips over the top. I added them as a layer before adding the shredded cheese. Creates a crispy corn topping more in line with a corn taco shell.

Yummy. I added garlic to the bisquick mix and rotel to the meat mix.
