  • 2 cups plain flour
  • 3 tsp. baking powder
  • 3/4 tsp. salt
  • 1 tbsp. grated lemon rind
  • 1/2 cup Crisco
  • 1 cup sugar
  • 1 egg
  • 1/4 cup lemon juice
  • 1/4 cup cold water

Step 1

Sift flour, baking powder, and salt. Blend rind and shortening. Add sugar gradually, creaming well. Add egg, lemon juice and water. Mix well. Add dry ingredients. Mix thoroughly. Drop by level tablespoons onto greased cookie sheet. Bake at 400 degrees for 8 minutes. Yields 5 dozen.
