Ingredients

  • 2 tsp. canola oil
  • 3 slices back bacon, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 1 stalk celery, chopped
  • 1 tbsp. dried oregano
  • 1/2 tsp. red pepper flakes or hot sauce
  • 1/4 tsp. each salt and pepper
  • 1 can diced plum tomatoes
  • 6 cups low-sodium chicken broth
  • 1 bag baby spinach
  • 1 can kidney beans
  • 1 can chick peas
  • 3/4 cup ditali or tubetti pasta
  • 1/3 cup chopped fresh parsley
  • 2 tbsp. chopped fresh basil

Preparation

Step 1

In a large soup pot, heat oil over med-high heat and cook bacon 2 mins. Reduce heat to med. and add onion, garlic, carrots, celery, oregano, pepper flakes, salt and pepper. Cook for about 10 mins., or until veggies are softened and lightly browned. Add tomatoes and chicken stock. Bring to boil. Reduce heat to simmer and add spinach, beans, chickpeas and pasta. Simmer about 20 mins. or until pasta is tender. Stir in parsley and basil. Sprinkle with parmesan when serving.
