Ingredients
- 1/2 c butter
- 1 c sugar
- 1 egg
- 1 3/4 c flour
- 1 t baking soda
- 1 T peppermint extract
- 6 oz semi-sweet chocolate chips
- Andes mints

Preparation
Step 1
1) Beat together butter, sugar, and egg.
2) Combine flour and baking soda. Add to creamed mixture. Stir in peppermint.
3) Drop by teaspoons onto greased baking sheets and bake at 350 degrees for 10 min.
4) Melt chocolate in double boiler over simmering water. Drop each cookie into the chocolate and coat it. Place on waxed paper and allow to harden.
