Ingredients

  • 1 egg, beaten
  • 1 cup whole wheat flour (or AP)
  • 3/4 Cup buttermilk OR 3/4 Cup milk with 2 teaspoons vinegar
  • 1 Tablespoon sugar
  • 1 Tablespoon packed brown sugar
  • 2 Tablespoons vegetable oil
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt

Preparation

Step 1

Beat egg in medium bowl. Mix in remaining ingredients until smooth.

Heat griddle or large pan over medium heat. Pour batter in 1/4 cup spoonfuls onto griddle about 1 inch apart. When pancake is puffed around the edges, flip. Cook for about 1 minute and remove to serving plate.

To add in dried fruit, nuts, or chocolate chips in a shape, make a small design as the pancake will spread during cooking.
