Chicken, Bacon, Mushroom & Spinach Lasagna

5 Star Delicious!!!!!!! Makes 2 small 8 x 4 inch pans, one pan serves 2-3 people. This pairs wonderfully with a glass of Chardonnay, perfect for a special meal.
Make one pan now and freeze the other for another time.
The whole recipe will also make an 8 x 8 inch square pan.

Ingredients
- 1 Tsp olive oil
- 3 slices thick cut bacon, cut up and browned crisp
- 1/2 lb. chopped up chicken breast, cooked in bacon grease
- 1 small onion chopped
- 1 pkg (8 oz) sliced mushrooms, chopped
- 6 c packed fresh baby spinach, coarsely chopped
- 1 jarred light Alfredo sauce
- 1/2 tsp freshly ground black pepper
- 1 c part-skim ricotta or 1% cottage cheese
- 1 large egg yolk
- 4 Tsp grated Parmesan
- 4 no-boil lasagna noodles (about 8 4 inches each)
- 5 slices mozzarella
- Green salad

Step 1
Heat oven to 375 degrees .
Spray cooking spray on (2) 8 1/2 x 4 1/2-inch foil loaf pans or (1) 9 x 9 inch square pan. In a large stainless skillet, heat oil over medium-high, cook bacon until crisp and remove to dish. Add chicken and cook until no longer pink and remove to dish. Add chopped onion to pan and cook until tender and then add mushrooms and cook 4 minutes. Sprinkle with pepper and garlic powder to taste. Stir in spinach and cook 3 minutes. Remove from heat and add Alfredo sauce.
In a bowl, stir ricotta, egg yolk, 3 tbsp Parmesan and 1/4 tsp pepper.
Spoon 1/4 cup spinach sauce into bottom of sprayed pan. Top with a noodle, a third of the spinach sauce and 2 slices mozzarella. Follow with a noodle, half the ricotta mixture and another noodle. Spread with a third of the sauce and top with cooked bacon and chicken and top with a noodle and 3 slices of mozzarella. Sprinkle with 1 tbsp Parmesan and cover with foil.
Bake 30 minutes covered and uncover and bake 15 minutes. Cool 10 minutes and serve with a green salad and glass of Chardonnay.
Freeze one pan well wrapped with plastic wrap. Thaw in fridge over night when you plan to make it, and follow the baking directions as given.
