Ingredients
- 5 ¼ cups pastry flour, sifted
- 1 tbs. Kosher salt
- 6 oz. butter, cut into small pieces
- 11 oz. shortening, chilled
- 1 cup ice water

Preparation
Step 1
Mix flour and salt. Add the butter and cut in until mixture resembles coarse crumbs, add the shortening, cut in until small clumps remain. Add water and stir. Fold a few times, wrap and chill 2 hours to 5 days.
Chill dough after chilling.
