Ingredients

  • For Steak:
  • 1 Lb. round steak
  • 1 Cup flour
  • 1 tsp. salt
  • 1/2 teaspoon pepper
  • Oil for frying
  • 1/2 cup evaporated milk
  • (or substitute milk w/egg beaten in)
  • For Gravy:
  • 3 tbs pan drippings
  • 2 tbs flour
  • 1 cup evaporated milk
  • 1 cup water
  • Salt and pepper to taste

Preparation

Step 1

Steak:
Cut steak into 4 pieces and pound to tenderize,
if necessary Combine flour, salt, and pepper.
In heavy skillet heat 'l4 inch oil. Dip each piece
of steak in flour mixture, then into milk and
into flour again. Fry in oil over
medium high heat until lightly browned.
Remove and drain on paper towels.

Gravy:
After frying steak pour of all but 3 tbs oil from pan.
Loosen any browned pieces from bottom of
pan and add flour. Combine flour
and drippings and stir until smooth.
Combine evaporated mile and water.
With pan over medium heat, gradually add milk
mixture, stirring constantly until thickened
