Ingredients

  • Pastry:

  • 1 cup water

  • 1/2 cup butter

  • 1 cup sifted flour

  • 4 eggs

  • Cream Filling:

  • 3 eggs

  • 1 cup flour

  • 1 quart milk

  • 1 cup sugar

  • 1 1/2 teaspoon vanilla

  • Whipped Cream Filling:

  • Make 2 cups

  • 1 cup (8 oz) heavy cream

  • 1 tablespoon sugar

  • 1/2 teaspoon vanilla

Directions

Pre-Heat Oven 400 degrees Pastry: Heat water and butter to boiling in saucepan. Stir in flour turning mixture until forms in a ball, leaving side of pan. Cool about 1 minute. Beat in eggs one at a time. Beat mixture until smooth. Drop by spoon on ungreased cookie sheet. Bake about 30 minutes until brown. Cream Filling: In a saucepan combine beat eggs and sugar and flour. Gradually stir in milk and cook stirring constantly until thick. Let cool add vanilla. Whipped Cream Filling: In mixing bowl beat cream until it thickens slightly. Add sugar and vanilla and continue to beat until it has the consistency of medium stiff peaks. Keep refrigerated until ready to use. Cut off top third of each puff and pull out any strands of soft dough. Fill puffs with filling. Replace tops, cover and refrigerate.
