Ingredients
- 1 cup cooked boneless, skinless chicken breasts, diced
- 1 tbsp of light soy sauce
- 2 tbsp olive oil
- 1 cup uncooked brown rice
- 2 cups low sodium chicken broth

Preparation
Step 1
Toss chicken with soy sauce. Set aside. Heat olive oil in large skillet. Add rice and fry over medium heat, stirring constantly. Add chicken broth and chicken mixture. Cover and simmer 20-25 minutes or until liquid is absorbed.
May add any of the following: diced onions, celery or broccoli. Simmer and stir another 5-7 minutes.
